Duocal Cheese & Pepper Omelet

Perfect for a nutritious meal or quick and tasty snack

Makes 4 servings

  • 1 cup chopped green bell pepper
  • 1 cup chopped yellow bell pepper
  • ½ cup chopped yellow onion
  • 4 whole eggs
  • 4 egg whites
  • ¼ cup Super Soluble Duocal Powder
  • ¼ cup water
  • ½ cup cheddar cheese
  • ½ cup salsa

Spray large non-stick skillet with cooking spray.

Add peppers and onion to skillet.  Cook and stir on medium-high heat until tender.  Remove from skillet and set aside.

Whisk together whole eggs, egg whites, Duocal, and ¼ cup of water.

Pour eggs into skillet; cover.   Cook 6 minutes.

Top with pepper mixture and cheese.
