Duocal Lobster Mashed Potatoes

Delicious and full of calcium to maximize
bone density

Makes 4 servings

  • 1 lb steamed lobster
  • 1 lb cooked, diced potatoes
  • ½ cup lobster base
  • 4 tbsp butter
  • ½ cup heavy whipping cream
  • 1 cup chopped scallions
  • ½ cup Super Soluble Duocal
  • 1 tbsp garlic powder
  • 2 tbsp Old Bay® seasoning

Chop steamed lobster meat into medium-sized chunks.

Melt butter over medium heat; add chopped scallions and lobster.  Sauté for 3 minutes.  Set aside.

Mix Duocal with lobster base and warmed cream until dissolved.  Add to potatoes and mash by hand with a potato masher until smooth.  Sprinkle with garlic powder and seafood seasoning.

Add butter, lobster, and scallion mixture to potatoes.  Mix thoroughly.
