Duocal S’mores Brownies

Makes 12 servings

Crust:

  • 6 tbsp butter
  • 1 ½ cup graham cracker crumbs
  • 2 tbsp sugar

Brownie:

  • 8 tbsp butter (1 stick)
  • 4 oz baking chocolate, grated
  • ½ cup Super Soluble Duocal Powder
  • 1 cup packed brown sugar
  • ¾ cup sugar
  • 1 ½ tsp vanilla extract
  • 4 eggs
  • 1 cup all purpose flour
  • 32 large marshmallows

Line an 8 x 8 inch square baking pan with foil so it hangs over the edge about one inch.

Crust:  Lightly butter the foil with some of the melted butter.  Stir the rest of the butter (6 T) together with the crumbs and sugar in a medium bowl.  Press the mixture evenly over the bottom of the pan.  Bake 20 min at 325°F.

Brownie:  Put the butter (1 stick) and chocolate in a medium microwave safe bowl.  Melt in microwave for 2 minutes.  Stir and microwave until completely melted.  Stir Duocal, brown and white sugar and vanilla into the melted chocolate.  Add eggs and beat vigorously to make a thick batter.   Add the flour and stir until just incorporated.

Pour batter into pan.  Bake for 40 min at 325°F.

Remove from oven and line top with marshmallows.  Brown marshmallows with broiler for 2 minutes.

Cool and cut into 12 (2-inch) squares.
